(More customer reviews)I am in charge of the galley of an ocean going ship (Chief Steward) this is my third one of the same kind. By far it is the single most used knife in the galley. Easy for those with limited knife skills as well as seasoned profesionals. We use one that is 3 years old to cut thick heavy rope and line. The new one is excellent for slicing paper thin fresh bread, tomatoes, and hot meatloaf. The blade can be sharpened and will give 1-2 years of hard everyday use in a production kitchen or galley. The handle is better than others of simliar construction. Can be sanitized in a 180 degree commercial machine day after day. The blade is a no stain type steel so it always looks good too.
