I chose this type of proofing basket over the bamboo type that can only be wiped off with a damp cloth. I was concerned about the potential of dough traces drawing unwanted critters.
This proofing basket along with the Rectangular Proofing Basket 5-1/8" x 13-3/4" Orange Polypropylene are really good for leaving a nifty pattern on your dough and giving your bread a uniform shape. I do wish that BakeDeco would offer the 1.1 rectangular at Amazon. I had to order it from their website.
Besides creating a beautiful loaf it prevents the dough from spreading during proofing which creates a higher rounder load. Spreading during proofing is a problem for the wetter no-knead bread doughs. The design pattern is not just for looks-it creates more surface area for a crust to form.
Just flour the bread form and place the dough in the form for proofing then invert onto a floured peel, slash the top of the dough then slide into the oven onto your baking stone.
I also like to use these for serving sliced breads, chips, cookies ,crackers, etc. when having family /friends for get-togethers. They work well for my casual dining style and look attractive.
They wash and store easily. Another big plus.
