My brioche simply pulls off easily right after baking, all the time, no exceptions! All I have to do is hold a warm mold (with a towel or oven mitten) upside down and pull on the brioche gently. Note that it is best to remove the brioche from the mold while it is warm or it might stick. After use, it easily cleans by washing with hot water only and drying with a kitchen towel. Its dark brown color promotes even baking. I have aluminum molds and have used tin molds, all I can say is that this Non-Stick bioche mold is so much more a joy to use. This 3-1/2 inch size is perfect for a 2 ounce dough. Depending on how much butter, egg, and sugar you've used, the 2 ounce portion will make a Brioche that's about 200 calories or more.

I own this KitchenAid model, and it is the second KA mixer I have owned. This model does a good job, and was a great replacement to my older model K45 of 30+ years. To me, the splash shield is indispensible for adding liquids, which tend to splash out, even at lower speeds. I would never be without my KitchenAid mixer, and it has helped out with cookie dough, decorator cake frostings, breads, quick breads, cakes, and anything else that needs a thorough mixing. The planetary action cannot be beat for efficiency.

I decided to give this proofing basket a try instead of the bamboo type. I was concerned that traces of the dough left on the bamboo baskets would have the potential to draw ants.
I highly recommend a proofing basket for the no-knead bread baker for several reasons:
- the wetter dough used in no-knead baking tends to spread quite a bit during proofing and this basket prevents the spreading and produces a better loaf.
- the attractive pattern it creates on the loaf creates more surface area for crust to form.
Very happy with this for baguettes and also the Bread proofing basket round. Size: 7-1/4" diameter. For 1.1 lb. bread. Both perform well for their intended purpose and are washable.
I did end up going to the BakeDeco and ordering the 1.1 lb rectangular bread mold since it is not available on Amazon. It is a better size for us. We still use this one fairly often though since we frequently have the children/grandchildren with us.
This size rectangular basket produces a nice loaf that enables us to have leftover bread that I use to make the fruit puddings in the The Cook's Illustrated How-to-Cook Library: An illustrated step-by-step guide to Foolproof Cooking that was a freebie from Amazon. My hubby enjoys these easy to make puddings ,so this is one of the rare times we want to have leftovers.
These proofing baskets also meet my criteria of multi-functional since they can be used to serve sliced breads ,of course, as well as crackers, chips, cookies, etc. for family get-togethers, potlucks and the like.

Received this item yesterday. I was a bit skeptical, but I measured out water in my regular glass measuring cup and then poured it into the Taylor Digital measuring cup and it was accurate. I repeated this experiment several times using different amounts of water. You do need to put it on the water mode. (Simple to do)
Next, I put it on flour mode. I measured out one cup in a dry measuring cup. I tamped it down quite hard and it measured 1 1/8 cup on the digital scale. I thought "Oh NO!". But I realized I had tamped it down too much so I re-measured in the regular dry measuring cup and then dumped that in the digital and it measured exactly at 1 cup.

Just to be clear, I measured items first in regular dry and liquid measuring cups to just test the accuracy of this item. Now that I am satisfied that it is accurate, I will just measure only with this digital scale (not measuring in other cups first).
I think this is a great idea. It has the water mode, oil mode, milk mode, flour mode, sugar mode and a regular digital scale mode so you can measure whatever you want in this cup.
This item turns off automatically after 5 minutes if it is not being used.
I like the easy to read aspect of this. Having older eyes, it is easy to read.
I would definitely recommend this digital measuring cup. It is a good size. Probably would handle any measuring job you would have.
11/08/09 - updated. I love this digital measuring cup even more than I did when I first received it in September. I have now figured out that this has a TARE function so that you can measure one item in there and then tare out the measurement, add another ingredient (and it will measure only that new ingredient) and you can keep adding in more ingredients into this one large measuring cup. It is very handy. No more countertop full of dirty measuring cups. Then I just stir it all up in the cup and pour the batter into a baking pan. Could not be simpler.
Also, you can hold down the on button for several seconds and it will automatically turn off the digital scale.

I bought a burgundy-red version of this set in a home & garden specialty store when I was last in Washington, D.C. in just February of this year. I have gotten into cooking bread, so the loaf pan has been used almost weekly since its purchase.
The first thing I noticed was the blackening of the silicone pan edges. Can't get that off, but I supposed that is to be expected with regular baking. The more critical issue, however, is that it seems to have been the signal of bigger trouble. First the right lip fell away and now the left. And it gave up holding its upright loaf shape well before that (presumably because "ultra-flex" is code for "much too thin"). I don't mind the bowed bread (we eat it anyway), but when I came across a used silicone bread pan from another brand and compared the results, I couldn't help but find this one inferior.
I cannot recommend this item for regular use.

I have been working on my homemade pizza project for years now. I tried different peels, but the dough always stuck. Jiggling and shaking didn't work, or I'd have to put so much cornmeal on the bottom it burned and was crunchy, affecting the crust mouthfeel that I'd worked so hard to perfect. If I put more flour on, it just burned and smoked up the oven. The movement of the pizza to the stone has alluded me for years - I resorted to pulling the stone out of the oven (I have the Pampered Chef one with the handles) and building the pizza on the hot stone, then putting it back in the oven. We burned ourselves more than once, plus you have to work so quickly you can't build a masterpiece.
With the Super Peel you can line up everyone's individual pizzas on the counter with very little flour. Each person perfects their masterpiece. Then zip zip you swoop up the pizzas and put them quickly on the hot stone, losing very little heat in the oven. This peel works EXACTLY as advertised. Watch the video on YouTube - it's exactly right. Your hand with the cloth stays still, while you move the peel. It's very very easy once you get used to the weight of the peel.
The quality is EXCELLENT. It's smooth, well crafted wood, comes with a very sturdy boad, and there's a hole in the top of the handle to store on a hook. It is heavy, so plan ahead where you hang it
This peel is much more expensive than others, but worth every penny in my book. It has changed how we do our pizzas, all for the better.

I threw this in to round out a promotion purchase, but it has become essential to my cooking. I reach for it constantly, not just when baking. For example, I can use the flat edge to quickly scoop up a thin layer of sauce and baste fish, even when the nonstick pan is still 400+ degrees. And my cookie recipe actually makes 24 cookies now instead of 22 and brown sink water.

The Goldrush Sourdough starter product is the Grand-daddy of Sourdough Starters. With the San Francisco strain of Sourdough starter yeast to back it up for authenticity this starter works every time. I recommend you begin by memorizing the two pages of instructions that come with the Starter and follow them explicitly. It is a multi-step process with NO SHORTCUTS. So don't get creative, the instructions are law.
"Goldrush" offers a companion book on Sourdough baking called, "Adventures in Sourdough baking" that will if read a few times make an expert of even the most paranoid novice. The success or failure of Sourdough baking is in the care and feeding of your starter/mother and the instructions or the book go into great detail on how to do exactly this. I (and the book) recommended the purchase of three new (and clean!)two quart containers. They will help you juggle the growing yeast cultures. About the time you think you have killed your "Mother" the book will describe what is going on. This is not one of those pretty things you make. Yeast culturing is part science and part art. So don't panic when it smells like beer, because it is pretty close. You will be successful. Remember to use the refrigerator to store your starter and follow the instructions!
As an aside I have struggled for years to "proof" yeasts and properly raise breads and have failed miserably, Goldrush offers a design for a proof box, that while simple works very well and a tip... use a 7.5 watt bulb instead of a 15.
Short of getting on an airplane, flying to San Francisco and returning with your obligatory souvenir loaf of San Francisco sourdough bread, the Goldrush Sourdough starter is your ticket to sourdough bread baking bliss.

I now use these pans exclusively whenever I bake bread in the oven (2-4 loaves a week.) I must confess that I received them as a gift and let them lay in the package for almost a year before trying them. I liked to grease my metal pans for a crusty, browned, "fried" surface. I imagined that a silicone pan would leave the bread pasty and damp. To my surprise, when I finally tried them, the pans brown the bread, both bottom and sides, without using a drop of oil or crisco.
This pan is to be preferred over many other silicone pans that I have tried or looked at: The 3 ribs you see on the sides act like the flying buttresses on Notre Dame Cathedral and keep the sides of your bread loaf straight. Some pans without ribs on the sides allow the loaf to bulge out as it bakes, and not have as pleasing a shape.
This is a well-engineered bread pan. I rarely write reviews, but I looked it up to buy more today and thought I'd let you know.
I also have the 8X8 square pan with the same wavy-ridge bottom and I use that for round loaves. You do have to have some support under that pan, like a small cooky sheet, when you put the risen loaf into the oven. The 8X8 also allows the loaf to brown nicely on the bottom. Sometimes I will sprinkle the bottom with semolina or oatmeal, but I don't need to.

These pans make great whole wheat bread. The little slices are just big enough to grab out of the toaster. Great if you are trying to limit your carbs, because you can have two slices for a sandwich, so no martyr factor.
The crusts are always perfect and the kids fight over who gets the heel.
HOWEVER - I've had this in my "save for later" box waiting for them to go down to their "normal" price, and just recently the price has QUADRUPLED !!! They are NOT worth that.
I know I can't put numbers in here, but the price should be in the single digits.
Editing to say - I don't think it had anything to do with me but the item dropped to its normal price :)

I've prided myself on my homemade pizza for years. It's something I take very seriously no matter if I am making my dough from scratch, or if time doesn't permit, using pre-made refridgerated dough. Now I've used all sorts of pizza pans to bake my pies from the round aluminum sheets, to the large round sheets with the holes in them, to the rectangular pans that pizzerias use for deep dish pizza. Bottom line is that none of them gave as true a pizzeria taste as when I used a baking stone. But if there's one drawback I had from using my stone is was my love of deep dish pizza. You could make some thick doughs on the stone, but ultimately you usually ended up with a very thick crust at the edges while the cheese, sauce, and other items all slid to the center of the pie.
With this round, deepdish edged stone you can make a true deep dish pizza because you can flatten out the entire pie just the way you want. You can leave it high at the edges or flatten it entirely. I like to make s chicago deep dish by layering the bottome with sausage or pepperoni before putting on a layer of cheese, then sauce, then one more layer of cheese and pepperoni on that. With this stone you can make a wonderful, layered pizza that you can never do on an ordinary pie pan or stone. Just marvelous!

I bought these particular pans because I didn't want lots of holes at the bottom or non-stick lining. The bread doesn't stick to pans if you lightly coat them with grease before laying the dough on top. Along with my bread machine, these have been really useful pans that have helped me make many a nice golden crispy, soft baguette. Without them, my baguettes are hard, flat, pale on top, and brown on the bottom. The pans didn't come with instructions for care, but if you treat them like a cast iron pan (avoid soap and soaking in water for too long, and drying the pan thoroughly after use) the protective finish will last longer.

I have to admit I was a little skeptical about using these, so when I finally did, I was pleasantly surprised. The breads came out of the molds very easily, and had a very nice, even light golden color all the way around and in every nook & cranny. The bread sliced up in perfect, thin little slices for canapes, with a tight crumb and virtually no crust.
My only major complaint is with the recipe on the box. First, there's no measurement for salt (but the instructions call for it); and in the end, the dough did not completely fill the molds, in the rising or baking. Consequently, when I removed the breads from the molds, 3/4 of each loaf was perfectly shaped, then tapered down to a narrow rounded end which had not risen to fill the mold. Next time, I'm going to try my own bread recipe.
The only other problem is that while the end caps come off easily enough, they are pretty difficult to put on (round caps for star, flower, & heart-shaped molds). This also enables to the molds to roll around on the baking sheet. It would have been better if they formed the end caps in the same shapes as the molds.
Otherwise, I was very pleased with these bread molds and can see myself using them often.
