(More customer reviews)I've baked "scratch" angel food cakes in this long loaf pan several times and have yet to be successful getting the cake out of the pan without tearing it in half. The issue is that I can't get the cake unstuck from the bottom of the pan. I've tried parchment paper on only the bottom (not the sides) and the cake just sinks in as the parchment doesn't hold the cake to the pan when inverted. I've asked on the Wilton forum and the main answer was: "now you know why the tube pan comes in two parts. A friend of mine said she was given an "old" tube pan which is much heavier. She threw away this one.
It does bake nice and even and would be great for anything but angel food cake.
