(More customer reviews)I've made various shortbread recipes and cooked to different standards (hint of color, lightly browned, super pale, you know who you are). This pan made a difference to all recipes. It is heavy but not fragile and you do thump it down to smack the shortbread out of the pan. I've used spray to grease it or butter. I've not used it without. Got to be thistles doesn't it? Wedges are also traditional. It is a delight to display but it is in its glory when baking with it.
