Global GS-14 6-Inch 15 cm Serrated Utility, Scallop Knife Review

Global GS-14 6-Inch 15 cm Serrated Utility, Scallop Knife
Average Reviews:

I bought this knife along with a few other Global knives and ended up returning it. This is not to say that this is a bad knife but I found that it was unnecessary alongside the rest of the Global knives I purchased. The non-serrated knifes are so sharp that there were practicaly no instances where I needed to use this knife. I did end-up keeping the 8" serrated bread knife but as long as you have that one, you don't really need another serrated knives.
I like being able to sharpen my knives frequently and this isn't very easy to do with serrated knives. A special tool and technique is required and the whole process is very time consuming. In addition, make sure that you use a ceramic sharpener on all global knives. Its supposed to have a different grit that is better for them. Kyocera (ceramic knife manufacturer) makes one specifically for Global but they are quite expensive.

J.A. Henckels International Classic 8-Inch Stainless-Steel Chef's Knife Review

J.A. Henckels International Classic 8-Inch Stainless-Steel Chef's Knife
Average Reviews:

(More customer reviews)
It's important to note that this knife is not made in Germany (the 4 Star, 5 Star, and Pro-S series are).
I started my good knife collection with a set of 3 of these International Classic knives. I later decided to get a larger set (9) of the 4 Star series, some of the finest knives in the world. However, I prefer this chef's knife over the 4 Star one. The grip is heavier and makes the balance a bit nicer.
For the paring knife, I much prefer the 4 Star one, so I wouldn't recommend the set of 3, but this knife is great. I use it all the time. If you are starting out on a knife collection, I recommend these things:
-a 4 Star 3-inch paring knife (or 2 if you are lazy with clean-up)
-this Chef's knife
-a cheap and large bread knife
-a medium sized 5-6in utility knife (good quality)
-a honing steel (good quality)
-a wood block to put them in (good knives should not be shoved into a drawer with other knives)
-[optional]a carving set of knife and fork, if you need carving utensils (I don't much)
I'd weigh the cost of these together against getting a more expensive set (if you are on a budget).

We purchased a Henckels Four-Star set about ten (10) years ago and use it daily. Out of the set of six or seven knives, this utility knife is our most frequently used. It is extremely useful in food preparation, holds an edge longer than the other non-serrated knives, and isn't affected by dish-washer abuse.
This is a great product that will last you many years. One caveat: NEVER allow your MOTHER-IN-LAW to borrow it and use it as a screwdriver. It will be ruined - hence my purchase of a second one of these knives.

The knife is awesome. I received it much sooner than I thought I would and it is now being used almost daily. I cannot believe the quality and the sharpness of the edge. Other knives I have do not compare.

Combining Emeril Lagasse's expertise in the kitchen and Wusthof's engineering of knives, Emeril Pro Cutlery kicks it up a notch with some of the most beautiful and functional knives on the market. Contoured to give you more knuckle room while slicing, this 8-inch off-set slicing knife is great for slicing fruits and vegetables and carving large cuts of grilled or roasted meats and poultry. The scallops on the blade help the knife easily cut through meats and reduce food sticking to it.
Precision-forged from high carbon stainless steel, the blade displays the traditional lines of the Wusthof Classic series, but has undergone additional polishing and grinding for exceptionally sharp and balanced cutlery. A gently rounded blade spine also prevents chafing of fingers. The unique mahogany handle is made of Micarta, which is constructed of very thin layers of linen impregnated with resins to form a strong, yet beautiful design. The flared design locks your hand forward so you have precise control while cutting.
Made in Solingen, Germany--The Cutlery Capital of the World--Wusthof knives are made from a special blend of German steel and each blade is precisely tempered, which allows the knife to hold its edge for an extremely long time, yet still be able to be maintained in your home kitchen without the need to be sent away for maintenance.
Generally, the construction technique and the materials used to manufacture make all Wusthof knives dishwasher safe, but handwashing is recommended. Wash your knives with warm water and a little detergent, rinse carefully and dry with a towel. Corrosive food particles will not affect your blade if washed off directly after use. Backed by a lifetime warranty.

I have been looking for some knives for my wife since she basically had NO decent knives. I did a ton of research on various knives and was looking at getting her a good brand name knife. I looked at all the big ones Henckels, Shun, RH Forschner, Wusthof, Global etc... I even looked at a few deals I found on Ginsu (insert mockery and laughter from professionals against the overly commercialized knife brand here :-)...) I'm not saying any of these knives are bad in any way, they each server their purpose and every person (and person's hand) is different, that's why these brands have been around for so long.
I had to consider my wife though... She's not big on spending $400 on a set of knives that she has to send off (or take somewhere) to be properly maintained/sharpened, and a lot of times, doesn't want to spend her time after preparing food, hand washing the knives. Well, my mom (and several other co-worker's moms) have had Rada knives for most of their lives and swear by them. The biggest issue I had with them was the handles... I didn't particularly care for them myself... Then I found they had a new black composite type handle, specifically designed to throw in the dishwasher... This was PERFECT for what my wife wanted. I purchased this with the RADA sharpener and any time one feels like it's loosing its edge.. I pull it across the sharpener a few times, and it's good as new.
I know these aren't on the same level as the big professional brand names, but the cost/value for our house outweighed everything else I looked at. I would recommend this to anyone professional or not... Who DOESN'T need a few knives you can throw in the dishwasher every once in a while? :-)

Rada Cutlery Cooks Utility Knife, Made in USA, Dishwasher Safe Black Handle (W240) Review

Rada Cutlery Cooks Utility Knife, Made in USA, Dishwasher Safe Black Handle (W240)

I had been given a set of Rada knives and liked the sharpness of the blades. I needed another chef's knife, so I bought this one. Although it's lighter and stays sharper than my Henkels, it takes some getting used to. I've seriously cut myself twice with it. Rada blades are fairly flexible, so they seem to be better for smaller knives than these larger ones. I still use this knife, but it's not really strong enough to be a serious chef's knife.

Shun DM0741 Classic U2 (Ultimate Utility) Knife Review

Shun DM0741 Classic U2 (Ultimate Utility) Knife
Average Reviews:

(More customer reviews)
I believe if you're serious about cooking, you should own great cookware and excellent knives. I finally stepped up and got excellent knives. For those who haven't heard the hype, Shun is one of the most respected knife brands in the world.
Great features of the entire line include these cool "D" shaped handles that fit your hand better. Each knife is made in a right- and left-handed version ([...] for lefties). The steel used for the blades is harder than what you would find in most other knives. The knives are EXTREMELY sharp.
If you're building your set and want to take care of the must-haves first. Move this down on your priority list. Get the chef's, paring and bread knives first. With that said, there is a place for this knife in your kitchen. As with all of my other Shun knives, this one is extremely sharp and it's relatively light.
This is great for sandwiches; you can use one knife to do everything well. I like the wider blade on this better than the narrow utility and tomato blades. This knife does not replace the bread knife, but it is good for small quantities of bread. I quickly tired of it when I used it to prep French bread for bread pudding.
This is an expensive, but lifetime investment. I encourage you to visit stores and feel the knives in your hand to make sure you are comfortable with them. For more info on Shun, check out Alton Brown's website. For ratings on various brands and types of knives, check out Cooks llustrated's equipment ratings.
Unless you are a daily sandwich fiend, make this one of the last knives you get to complete your set. It is certainly a nice knife, but not as crucial as other knives. My only regret is that I already own the tomato and utility knives.

Wusthof Classic 5-Inch Serrated Utility Knife Review

Wusthof Classic 5-Inch Serrated Utility Knife
Average Reviews:

(More customer reviews)
In Europe, this knife is called the "sausage" or "brunch" knife. Since Americans don't usually cut baguettes or weisswurst as part of making lunch, however, Amazon has chosen to call this what it is - the serrated utility knife.
Name notwithstanding, the edge on this knife is the same as the one on the Wusthof tomato and bread knives, and the knife does in fact do splendidly on tomatoes (which aren't too terribly different from sausage) and crusty bread (as long as it is skinny french bread - get an 8-inch knife for the hefty american stuff).
Where this knife truly excels, however, is cutting citrus. The blade is long enough to handle grapefruit, and the scalloped edge will cut even kumquats and key limes without crushing the pulp.
So, I would have called this the citrus knife (or, maybe, the "soft things with a hard skin" knife). While mine doesn't get used as often as the paring or chef's knife, it's among our kitchen's top-five.

Pure Komachi 2 Series 9-Piece Knife Set with Block Review

Pure Komachi 2 Series 9-Piece Knife Set with Block

I have owned these for about 6 months now. At first, they seemed a bit lightweight but after using them, they are perfect. They are well balanced and extremely sharp. So far, there has not been a single negative. If you are used to using cheap knives, you should be very careful when you first get these. We had company at the house who did some cooking and she ended up cutting herself at least six times! She never owned a knife that took so little effort to use and she kept slipping up and nicking her fingers. The knife block is a little large but it displays the colors of the blades very nicely. I tried putting them in a smaller wooden block but they just did not look as good. We use colorful Fiesta dinnerware in the house and these knives add a bold splash of color of their own to the counter top. I liked the set so well that I went back and bought all the remaining knives in the set.

A fantastic, eye-catching set for any kitchen enthusiast, the 9-piece Pure Komachi 2 knife block set includes an 8-inch chef's, 8-inch bread, 6-1/2-inch Santoku, 4-inch tomato/cheese, 5-3/4-inch sandwich, 4-inch citrus, 3-1/2-inch paring, and a 6-inch utility knife. They all store in an included clear acrylic block that works as a perfect display for their brilliant colors. The brilliant monochromatic colors on the series serve dual purposes: color-coding makes it easy to choose the right knife for the job and it helps guard against cross-contaminating food. This non-stick coating resists corrosion, makes cleaning simple, and helps the knives glide through food with ease. Color-matched handles are lightweight and ergonomically contoured for a comfortable, fatigue-reducing grip. The set is dishwasher safe.

Think I bought this at Target, but it's hard to mistake the knife.
I love it! After tons of crappy knives it was so nice to have one that actually sliced bread without squishing it. It's easy to clean, just running it under the water is usually enough. And it's easy to find in a drawer or utensil stand. :)

A fantastic multi-purpose knife, the 6-inch scalloped sandwich knife features a large, reverse scalloped edge to cut through fruits, vegetables, and bread with ease. The bold, bright blade color is achieved by bonding food-safe, FDA-approved resin to a high-carbon stainless-steel blade. A high-carbon blade retains a super-sharp edge over extended use, and the non-stick coating resists corrosion, makes cleaning simple, and helps the knife glide through food with ease.
