Farberware Pro Forged 14-Piece Knife Block Set Review

Farberware Pro Forged 14-Piece Knife Block Set
Average Reviews:

I bought this set based on CR's review fo them as a "Best buy." For comparison I also bought one of the Wusthof Grand Prix knives, which were rated the best overall. I would say that the Wusthof is a slightly better knife, but I fully agree with CR that the price difference is not worth paying. The Farberware set is very good and cuts really well. It stays sharp and does everything you might ask a knife set to do. After pondering the issue a while, I have decided I would be foolish to spend the extra money for the higher end knives. This set is really a great deal -- you get a very good set of knives at a very reasonable price.

These knives are drop forged, heat-tempered and full tang for strength and durability. Their precision ground blade makes them nice and sharp. As we all know, a sharp blade is far safer than a dull one. Unlike many value-priced sets, you can actually use a sharpener on these knives, giving you many more years of service. The plastic handles are triple riveted and there is an extra wide safety bolster which affords comfort and optimum balance. This set offers a useful selection of well-constructed cutlery, at a very attractive price.

Henckels Premio 14-pc. Metal Cap Knife Set Review

Henckels Premio 14-pc. Metal Cap Knife Set

Bought these because I needed something after I took a 3 month temp job and didn't want to move a lot of stuff. The knives are nicely balanced, but heavy - if you like a light weight set these are not for you. Their ability to remain sharp is in question - I have to use the steel pretty much every other use. In fairness- this is their recommended interval on the instructions but it would seem that they should hold an edge for longer than that. Two disappointments - they stain easily and often, tomatoes leave a noticeable stain that takes some work with a scouring pad to remove. Unless you wipe them immediately after use it will leave a mark. I haven't put them in the dishwasher - they're always hand cleaned but I'd be really reluctant to try the dishwasher after the staining issues I've had in normal use. The second is that although they're touted as being made from "Genuine Solingen Steel" (it was printed on at least one of the packages) they're in fact made in China.

Wolfgang Puck 17pc Carbon Steel Steak Knives Cutlery Set w/ Block Review

Wolfgang Puck 17pc Carbon Steel Steak Knives Cutlery Set w/ Block

I got these for Christmas from my mom,after falling in love with her set. She got them at Sam's club. These are the best knives I've ever used! (And I've worked in many a professional kitchens plus my in-laws have a tendency to buy the best of everything-including kitchenware even tho they don't cook! haha) The block is very nice and well weighted. The knives all have great balance and a nice weight to them. I haven't cut myself (I'm a former girl scout & culinary student, so i've been threw tons of knife safety classes haha) but they are definitely sharp enough to do the job if one wasn't careful. I love how sturdy these knives are, no bending, curving or warping. I'm planning on buying Wolfgang's Santoku set to pair with this set, since it doesn't include Santoku's-this set's only downfall. Luckily, for the price, the other set is still well within budget! Love love love these knives! I fully recommend!

Gunter Wilhelm Cutlery 250 Executive Chef 12-Piece Professional Knife Set with Wooden Storage Block Review

Gunter Wilhelm Cutlery 250 Executive Chef 12-Piece Professional Knife Set with Wooden Storage Block
Average Reviews:

(More customer reviews)
I purchased these knives at Costco for a screaming deal. The entire 12 piece knife set was $279 and the add-on 7 piece steak knife set was an additional $75. This includes:
* Carving Fork
* 10" Meat Carving slicer w/dimples
* 9" Offset Bread knife
* 10" Chef Knife
* 10" Boning Knife
* Butcher's Cleaver
* 7" Asian Cleaver with dimples
* 7" Santoku with dimples
* 3.5" Paring Knife
* 10" Diamond Steel
* 10" honing steel
* 6 Steak knives
* 2 Wooden Knife Blocks
They are made of German forged 440C steel at a Rockwell hardness rating above that of the comparable Henckels and Wusthof, which means it will hold a sharp edge longer than those brands.
I was skeptical at first but after handling them and actually trying them out in the store, I was convinced it was a great deal. Plus, Gunter Wilhelm has a 30 day money back guarantee and Costco has a lifetime money back guarantee, so how could I go wrong?
Other than these knives being higher in quality than the competition, and other than them being a lot cheaper than the competition, I was also sold on the fact that Gunter Wilhelm has a *lifetime* guarantee on their knives. Should one break, crack, bend, chip, split, etc. in the lifetime that you own it, they will send you a new one FREE of charge, EVEN IF IT'S YOUR OWN FAULT. Now how can you beat THAT?
I've used the knives for about 3 weeks now and look forward to every time I pull one of these knives out of the block. They feel great in your hands, are razor sharp, are well balanced and are a joy to use. Just be careful, because they really are razor sharp. I barely (accidentally) brushed up against one of the blades and instantly drew blood.
To keep them razor sharp, use the honing steel prior to use every time. Just a few passes on each side will suffice.
As for customer service, I've called twice so far with questions about the knives and to state that I love them. Never was anyone rude to me like the other reviewer here has written. Don't believe him. It's a quality company with a quality product and I'm so glad I made the decision to purchase these knives.
I'd recommend them to anyone seeking a quality knife set.

Equally suited for an at-home cook as for a professional chef, this 12-piece knife set makes a useful addition to any busy kitchen. The high-quality knives feature precision-forged blades made of 440C German steel--a combination alloy made of high-carbon steel and stainless steel that sharpens easily, holds a razor-sharp cutting edge, and resists staining. Plus, the knives come sharpened all the way to the base of the blade where most cutting occurs, and their attractive Pakkawood triple-tang handles provide superior balance and an ergonomic grip for exceptional comfort and control. The set includes a 10-inch chef knife, a paring knife, a Santoku knife, an offset bread knife, and an Asian cleaver, as well as a 10-inch pointer slicer, a carving fork, a boning/fillet knife, a butcher's cleaver, and two sharpening steels (a 10-inch diamond steel and a 10-inch honing steel) that help keep the blades in good working order. Even more, the set provides a large wooden block that not only showcases the collection, but also safely and securely stores the knives when not in use. Using the knives on bamboo cutting boards works the best since bamboo won't warp, crack, or split, and it's naturally anti-bacterial. To clean, hand wash the knives with warm water and a mild detergent, then rinse and dry immediately. The 12-piece knife set measures approximately 12 by 6 by 17 inches and carries a lifetime warranty.

J.A. Henckels International Forged Synergy 13-Piece Knife Set Review

J.A. Henckels International Forged Synergy 13-Piece Knife Set
Average Reviews:

(More customer reviews)
My wife and I have been using this 13-piece set of Forged Synergy knives for about 8 months, and we couldn't be happier with them. They are well made, well-balanced, have beautiful handles, a nice finish, and hold a very sharp edge--we've sliced tomatoes with all of them. If you're buying your first set of fine knives, these WILL hold up to the Henckels reputation for quality.
Now regarding what some others have said, I'll just add my two cents. There is a "Forged Synergy" and a "Fine Edge Synergy" series, and the main kitchen knives in those sets are NOT the same (though the steak knives appear to be so). The forged series has a metal tine that runs all the way through the handle with the black grips riveted on. The J.A. Henckels International Fine Edge Synergy 13-Piece Block Set is totally different--see the Amazon photos and descriptions for yourself. Yes, this Forged Synergy set is also made in China (not Spain or Germany like some of the more expensive Henckels sets), but the quality is still excellent and should far surpass most users' expectations.
Regarding rust spots, we've had none. However, there are two main types of stainless steel: one is harder and slightly less stain resistant; the other is more stain resistant but slightly softer. That means that you give up a little stain resistance to have a knife that holds a sharper edge longer. I think that's much more important than having to clean an occasional rust spot off if it were to occur.
There are only two minor faults I find with this set (that didn't stop me from buying it, however). The kitchen shears are excellent quality and cut great, but the two parts should be easily separable for cleaning purposes. You'll see this in newer shear designs, and it's not a feature that would add to the cost. Also, the black finished knife block will eventually show wear and tear from missing when inserting knives into the slots. I'd have prefered a standard maple block. Lastly, for a few dollars more, I'd recommend the 16-piece version of this set which includes three more knives for about the price of one more (J.A. Henckels International Forged Synergy 16-Piece Knife Set).

Cutco Essentials Set with 1649 #1845 Review

Cutco Essentials Set with 1649 #1845
Average Reviews:

(More customer reviews)
We have owned Cutco steak knives, paring knives,
a Chef knive, a bread knife, a carving knife set,
and others for many, many years. I had never sent
any of them in for their free sharpening service.
The Chef knife finally got a chip on the tip, and
the special cutting edge of the steak knives was
wearing down, so I decided that it was time to
send these knives in for "repair" and sharpening.
I did have to pay shipping to send the knives there,
and $8.00 to have knives shipped back. To my delight,
Cutco decided the knives were worn enough to be replaced
with brand new knives. This was a total of 9 knives that
were replaced. Cutco truly does stand by their product for
life.
I have other family members who have owned Henckels knives,
but Henckels didn't have the special edge that Cutco has on their
steak knives and many others. My family now owns Cutco, and can't
imagine having anything else. We are sold on Cutco!

Victorinox Cutlery BladeSafe for 8-to-10-Inch Knife Blades Review

Victorinox Cutlery BladeSafe for 8-to-10-Inch Knife Blades
Average Reviews:

(More customer reviews)
I really was impressed with how sturdy these blade guards were. I have the 8" Forschner Chef's knife, and it this of course fits it perfectly.
There are soft pads inside the guard that pinch the knife securely and keeps the blade from rattling around. At first, this does create a residue on the blade, but after a few weeks the residue no long appears.
I also have used it on my Mac Pro MTH-80 chefs knife - Due to the thinner Japanese style blade, the pads don't pinch so blade guard doesn't hold the knife completely secure, but the blade is still completely protected and safe. Just keep this in mind if purchasing for a Japanese stamped blade. If you have a standard Henckels, Wustoff or Forschner western style blade - you can't go wrong with these.

My old steak knives were flimsy and worn so when I shopped for new ones I wanted knives that were solidly made by a top-rated company like Henckels. The price was right so I bought two sets. I think I should have bought 3 sets. They are always sharp and my guests remark on the quality of the knives at meals. I even use them sometimes when I am doing prep work. These would be a great gift item too.

J.A. Henckels International Henckels Classic 7-Inch Santoku Knife with Hollow Edge Review

J.A. Henckels International Henckels Classic 7-Inch Santoku Knife with Hollow Edge
Average Reviews:

(More customer reviews)
I'm a fan of the Spanish-made Henckel's Int'l Classic lines. I have the bread knife and the utility knife as well. I think the major budget concessions (as these are not the high-end German-made line) comes in the size. Classic blades, though full-tang and thrice-riveted, have less steel than comparable brands. This makes them slender and light in the hand. However, less steel is not lower-quality steel, and these blades are incredibly hard and reliable.
This santoku is still large enough to use as a spatula when cutting, delivering onions, mushrooms or other slices or mince to the pan while cooking speedily. It sharpens easily (I use a small stone under running water), and responds well to a steel every few uses. It's the sharpest blade in my collection, easily slicing up my sponges when I clean it. With care, it won't do the same to your skin, mostly because of the sturdiness of construction that breeds confident handling. It won't slide off most vegetables before slicing in, and can even cleave small poultry bones with slow and steady pressure downward (I wouldn't use it to hack as real cleavers do). This is a precision instrument, not a blunt tool.

When you've got a big prep job, this 7-inch Henckels Classic Santoku knife will get the job done quickly and precisely. The Asian-style Santoku knife has broad blade and especially sharp cutting edge, and it's a great companion for preparing meat, fish, and vegetables. All Henckels Santoku knives have a fine-polished razor edge that gives them their typical sharpness, and a hollow edge that is ideal for extra thin cutting.
Part of the J.A. Henckels International Classic cutlery series, this knife features a commercial design that's hot drop forged for durability, strength and weight. Made of a non-staining carbon steel, it's hand honed to a precision cutting edge. The triple riveted handle surrounds a full tang. Together with a full bolster, this handle provides proper balance to safely and comfortably execute even the most difficult cutting tasks. It's backed by a lifetime warranty against defects in material and/or craftsmanship. Handwashing with mild cleanser recommended.

Shun Ken Onion Chef's Knife Review

Shun Ken Onion Chef's Knife
Average Reviews:

(More customer reviews)
I got this knife as a kind of impulsive indulgence, I think it looked cool in its own holder and I had heard good things about Shun knives. However, all those good things are true. It is by far the sharpest knife I've owned, and I've got Henckel Zwillings (not the cheapo kind you get at Target) that have been sharpened to what I USED to think was the sharpest blade around.
I'm not dissing the Henckels - if I had not indulged in the Shun I would have been very happy with their performance. But I did get a chance to make some observations on how the Shun shone (no, it's not the same "u" as in "Sun" but it's a borderline pun):
- Ripe tomato: The Shun needed no sawing action whatsoever. It cut the initial waxy and soft skin like it was being dipped in water. All my other knives need to break the skin either with pressure, angle, or a teensy bit of sawing motion
- Dish brush: While cleaning the blade side with a circular motion in sudsy water (safe for sharp knives) I found bits of the brush bristles in the water. Anything that touched the sharp edge was cut, and that has never happened with the best knife I'd had prior to that. I can normally touch a sharp blade without cutting myself, I am not going to try that with the Shun.
- Tortilla stack: I make chips out of 8" flour tortillas by taking a thick stack and chopping it into diamonds or strips, then frying. I've always had to get over the knife and press it in because the multiple layers (20) would slow down the blade. Or I'd work in batches of 6-8. With this knife, I cut the whole 20-thick stack with less pressure than I've used for half that many.
- Potato - while hardly a test for a knife (anything cuts potato) the slicing was awesome. After cutting into the potato, it felt like the Shun DREW the potato into itself and the potato came apart like it was already sliced. If you've ever held a potato in your hand and expected to re-position your hand after you're halfway through, DON'T do it with this knife. It will be cutting into your hand before you even realize it.
If anything got close to cutting like a lightsaber, this would be it. I kid you not. I wonder how long the sharpness lasts, but I'm enjoying it while it's there.
About the Ken Onion design - those used to the generous handle on Henckels might find the handle appearing to be a bit short (I have big hands) but that's until you find the thumb and forefinger position that fits almost over the blade. However, once you hold it, you realize it gives you an added cutting advantage. My only complaint is that the advantage is wasted. You'd have to wait till the blade goes blunt before the handle's design can actually help you cut better.
Did I mention I'm extremely happy with it? Happy indulging.

Wusthof Classic 8-Piece Knife Set with Block Review

Wusthof Classic 8-Piece Knife Set with Block
Average Reviews:

(More customer reviews)
I got this as a wedding gift, and I was amazed at how much of a difference it makes in the kitchen! Good knives make cooking such an enjoyable experience, and Wusthof is well-known to be one of the best out there. The 8-piece set is perfect for people who want to start with a good set and build up on it. Of course I use the chef's knife the most, but I also use the bread knife and paring knife a lot too. I think a santoku knife would be a nice addition to this set, and perhaps steak knives would be wonderful to fill in the 6 slots on the bottom of the block, but in terms of practicality, I never feel like I need more than what I already have (but this is coming from a person who is a beginner in the kitchen). I have been using my knives for about 1 1/2 years now, and the knives are still as sharp as they were when we first bought it. I'm sure we will have to sharpen them eventually, but with good care I expect these to last a very long time.

Known worldwide for their superior performance, Wusthof knives are the cutlery of choice among many professionals and by discriminating amateur chefs. The Classic series features a traditional styling that makes it the most popular of the Wusthof lines. The blades are formed with the perfect balance of high-carbon steel and a stain-resistant alloy so they retain their edge longer and are easier to resharpen. The blade is ground and polished by computer, ensuring perfect tapering from bolster to tip, and the edge is then hand-honed for precision slicing. The sturdy feel of the knives is achieved by the weighted bolster, Wusthof's signature feature. The tang runs through synthetic handles and is secured with three rivets.
This eight-piece set has all the kitchen cutlery basics for everyday use. The set includes an 8-inch chef’s knife, a 6-inch sandwich knife, an 8-inch serrated bread knife, a 4-1/2-inch utility knife, and a 3-1/2-inch paring knife. A pair of kitchen shears and a 9-inch sharpening steel complete the set. Everything fits neatly into the rubber-footed oak block, which has space to add six more steak knives and two more prep knives.
What's in the Box 8-inch cook's knife; 6-inch sandwich knife; 8-inch serrated bread knife; 4-1/2-inch utility knife; 3-1/2-inch paring knife; kitchen shears; 9-inch sharpening steel; rubber-footed oak block with eight extra slots.

Calphalon Katana Stainless-Steel 8-Piece Knife Set with Block Review

Calphalon Katana Stainless-Steel 8-Piece Knife Set with Block
Average Reviews:

(More customer reviews)
Pros:
These knives are pretty, with a rounded black handle, and a layered damascus-style blade. This means the blade, while relatively smooth, has a wavy-layered look to it. The Amazon picture is accurate to what you will receive in your set. Out of the box, each knife is quite sharp; enough to shear paper, but not hair.
I have smaller hands, and have some trouble wielding the 8" chef's knife, but find that the 5" Santoku is excellent for chopping vegetables. The 6" utility knife is also very useful for thinly slicing meats. I do use a different paring knife (Pampered Chef) as I find the Katana paring knife a little too sharp and rigid for say, lopping the ends off string beans in my hand. We also made the additional purchase of the 9" bread knife to complete the set. The bamboo block is attractive, and the slots are wide and deep enough to put other wide-bladed/long knives in. However, note that if you get the bread knife, that only leaves 3 empty slots (i.e. no dedicated steak knife slots).
Cons:
Two slight cons about this set: (1) The diamond-sharpener looks too coarse to use on these blades, and; (2) The shears in this set are lackluster. While they are relatively heavy-duty, they do not come apart for cleaning, and the handles are a little large and unwieldy. I prefer a smaller-handled set of kitchen shears that come apart for cleaning (when I decide to cut meat instead of slicing it, a la Alton Brown). But in their defense, they do cut cleanly.
Comparisons:
We love our Katanas, and they make ordinary chopping/slicing a much more endurable chore with their sharpness and ease. If you are "stepping up" from an ordinary consumer-grade set, you will definitely feel the difference. For example, I had a $90, 10-piece Kitchenaid set. The Katana Santoku knife is definitely more balanced, and the garlics/onions slide right off the Katana's grooves, whereas sometimes foods would stick on the Kitchenaid. I do find that the Kitchenaid chef's knife is slightly easier to handle, due to the longer curve (better rocking-chopping motion), and the slightly reduced weight, but the Katana is sharper, more rigid, cleaner-cutting, and therefore faster. The Kitchenaid shears were lighter (easier to wield) but flimsier. Unlike the KitchenAid shears, don't expect the Katanas to make a scissor-like snipping noise, they are entirely silent. The Katanas do require slightly care than your run-of-the-mill knife set, but simply wash them shortly after you're done using them and dry them prior to putting them back into the block.
Personal Opinion:
I don't know what "Professional Chefs" think, and I'm just an average cook. Thus, these knives went above and beyond my expectations by reducing my prep time, and adding an attractive focal point to the counter. Granted, they don't come out of the block making a lovely ringing steel noise like our Shun steak knives, but for the foreseeable future on a limited budget, the Katanas are a worthy investment.
Some Miscellaneous Notes:
These knives are made from VG-Japanese steel, but they are manufactured in China. We found this set (1st Quality) at more than 50% off in one of the big box stores, which made it a steal. However, if we had paid full-price, we probably would have done a comparison with a Shun knife set instead.
[Edit - July 2008] Since purchasing these knives, we have noticed the following: (1) do not leave them overnight in water - as they will rust badly, (2) the 5" Santoku has inexplicably developed two hairline fractures in the blade. It was my favorite knife, was not used on inappropriate objects/materials (not used for chopping bones or anything), and was always used on a cutting board, so this development within a year has been very disappointing. I still like the set, but the rusting and the fracturing make me a little less pleased with them. I would drop the star-quality to 3.0-3.5.

After revewing knife sets and checking CR recommendations I decided to purchase this set. CR said that Chicago cutlery was the way to go if you do not want to spend a small fortune on knifes that were still of decent quality.
This is the first time I buy something that did not have a review and the first time I write a review because I was so upset with the quality. The knife are not sharp, and they rust - and the block is cumbersome and the inserts that hold the knifes come out - it was actually missing one when it arrived.
I hastened to open it and set it up before I noticed, otherwise, if I still had the box, I would have returned it.

Easily slice through sandwiches and deli meats quickly and easily with this specially designed sandwich knife by Victorinox. Using a serrated edge, the knife cuts through bread without crushing or flattening it, and is great for dividing sandwiches. It's blade is made of carbon steel, which is incredibly hard and provides a superior edge to stainless. The stylish black handle nicely complements any kitchen setting, and has a modern feel and design.
Previously known as RF Forschner, Victorinox knives are made in Switzerland by the makers of the original Swiss Army Knife. Stemming from pure necessity, Master Cutler Karl Elsner began producing the Original Swiss Army Knife in 1891 to meet the needs of soldiers on the field. Since then, Victorinox has become a fine cutlery company true to its Swiss roots and professional cutlery precision, quality, functionality and versatility. Victorinox is in the hands of more professionals, from the meatpacking industry to a four-star restaurant, than any other brand of cutlery.

Contemporary Cutlery 6.5" Sandwich Knife Review

Contemporary Cutlery 6.5 Sandwich Knife

This knife is amazing!!! it replaces a bread knife, a paring knife, and a Chef's knife... because it can do everything!!! I work at Bed Bath and Beyond and we don't carry this knife at the moment but i have been doing my very best to make sure we do, a Calphalon rep. gave me one of these knifes to try out, and i haven't been able to put it down since... On a regular basis i refer people to Calphalon's Website to check this thing out, for anyone who is fed up with trying to sharpen your serrated bread knife look no further, as it has no serrated edge but still cuts through bread, and even if you were to allow it to get dull, due to the wavy pattern of the blade it still slices through tomato(even squishy tomatoes) with ease. I really can't say enough... best design of a knife i've seen, hands down... who knew a sandwich knife was the missing tool of my kitchen... also well weighted, and solid in the hand as with most other large Calphalon Contemporary knifes... To whoever takes the plunge and buys this unique knife, you will be happily surprised... and did i mention it also cuts through sandwiches really well( as to be expected i guess).... i'll say it one last time, because it really is that good, amazing Knife!!!

I bought another set of Henckel knives 25 years ago and have decided to get a new set. This is not because the others didn't work, they did. I lost my paring knife and decided to treat myself to a whole new set. The Forged Premio set is just what I was looking for. They feel great, cut great, are a good price and they are well made. I love them. Henckels is a fabulous company. I broke the point off of my old paring knife, sent it back to the company and they sent me a brand new one, no charge. You can't go wrong with that. I highly recommend these knives and this company.
