I bought this knife because I needed something very sharp to cut sushi. I'm pleased to say that I'm very happy with my purchase.
It is not your traditional chef's knife, and needs more care. It's wooden handle means that it cannot go through the dishwasher or be kept in water too long. This is probably why the knife is so well priced.
The Japenese steel is extremely hard which makes it harder to sharpen, but will keep an edge sharper than a razor, and longer than any German knife. The knife feels good in your hand and is of medium weight. It is more suited for professionals and knife enthusiast.
