Lodge Logic Pre-Seasoned Perch Muffin/Cornbread Pan Review

Lodge Logic Pre-Seasoned Perch Muffin/Cornbread Pan

I've got the non pre-seasoned pans and I seasoned them according to the instructions. The key I've found it to preheat the oven and put the empty pans in at the same time. When the oven is at the right temperature, pull the pans out, and dribble a little oil (I use light olive) into each fish, take a paper towel and rub the inside completely then spoon/pour in the batter. Then they pop out perfectly every time.
The design is cute, but as with any sort of bread thing, the pattern shows through but not perfectly. Still fun to use. Two pans will handle a regular batch of muffin batter from my Joy of Cooking. (I like buttermilk c/ bananas walnuts, or blueberry, or craisn's or apples as well as the cornbread recipe that lodge sends with the pans.

Southern chefs will tell you that nothing bakes cornbread, muffins, or hushpuppies like a good cast-iron pan, and this Lodge Logic perch pan is among the best. The vessel features a series of five fish-shaped impressions, each measuring 4-1/4 inches long and 2-1/2 inches wide. The piscine shapes are clever and precise, complete with fins, scales, and other perch-specific details. Meanwhile, the batter cooks beautifully thanks to the cast-iron material, which heats slowly but evenly and holds its heat far longer than stainless and aluminum rivals. The resulting muffins and cornbread cakes are cooked to the peak of perfection, with slightly crisp exteriors and moist, flavorful insides. It's the perfect way to add a watery touch to your next meal, particularly if your family is filled with fishermen.
Unlike traditional cast-iron cookware, Lodge Logic pans come preseasoned through a proprietary "electrostatic" vegetable oil spray system. The preseasoning process readies the bakeware for cooking right out of the box, making it far more convenient than old-style cast-iron pans that required oil and oven seasoning before use. The timesaving process also generates a nonstick finish that helps preserve the bakeware for generations while crafting an attractive heirloom appearance. Lodge recommends hand washing the pan with a stiff brush and hot water for best results. The pan measures 15-1/4 by 1 by 5-5/8 inches (W x H x D) and carries a lifetime warranty.

KitchenAid PRO 500 Series 5-Quart Mixers Review

KitchenAid PRO 500 Series 5-Quart Mixers

This mixer is absolutely fantastic! The lift mixer is so much better than the stand style mixers in that the stand mixers get worn out and the bowl tends to jump around. I used to work with a stand style mixer and I would have to put all of my weight on the bowl while I was mixing stuff to keep the bowl from flying out into the kitchen! The motor is super powerful and I am very pleased with it. Since I started making everything we eat from scratch it is nice to have this great mixer to save me the labor of hand mixing stiff doughs and such. I noticed other people had problems with it. One person wrote that the bowl didn't stay in place at all, it needs to be snapped in, if you look at the back on the mixer you'll see a strip of metal where the bowl slides into, on the bowl where it meets the mixer is a metal nub, that's where it is supposed to snap in. They also said that they put the attachments in the dishwasher and they changed color. The instructions say to hand wash them ONLY!!!
It was an absolute pleasure just opening the box up that it came in. It came just as the seller described, brand new and shiny red. I look forward to years of use and everyday I admire it in my kitchen!

Attractively housed in durable, die-cast metal, this stand mixer features a high-performance 325-watt motor that produces enough power to handle the heaviest mixtures and mix large batches easily. The unit's 10 speeds range from a very fast whip to a very slow stir, allowing for everything from whipping egg whites to slow churning bread dough, while its Soft Start function helps prevent ingredient splatter and flour clouds by gently accelerating to the selected speed after start-up. To ensure even blending, the appliance creates a unique mixing action that spins the beater clockwise while the shift spins counter clockwise. The mixer provides a 5-quart-capacity brushed-stainless-steel mixing bowl with a contoured handle, as well as a burnished flat beater, a burnished dough hook, a wire whip, and a one-piece pouring shield. Other highlights include a 9-cup flour capacity, direct-drive transmission with all-metal gears, automatic safety shut-off in the event of an obstruction or overloading, and a sturdy lifting mechanism that uses a metal arm and steel lever to effortlessly raise the ingredient-filled mixing bowl. Available in a variety of fashionable colors, the stand mixer measures 13-2/7 by 10-2/5 by 16-2/5 inches and carries a one-year hassle-free replacement warranty.

Wusthof Classic 6-Piece Cook's Cutlery Set Review

Wusthof Classic 6-Piece Cook's Cutlery Set

I normally do not like knife sets no matter the quality because you get stuck with a bunch of knives you simply do not need. As this set was given to me as a gift I am sort of stuck with it. I must say though that I have been quite happy with everything and really do not have that many complaints. I did find that the 8 inch bread knife was a bit sort for my particular taste; feeling as I do that these particular knives should be at least 10 inches long. I also immediately replaced the sharpening steel with a better grade ceramic one as they do such a better job.
These knives are without bulging bolsters which is good as they are a waste anyway and do nothing but interfere with the sharpening process. The balance is good and they came very sharp. They are rather easy to keep sharp. I did not like the visible tang that runs the length of the handle as that is just another bit of steel that has to we watched for rust and corrosion and is a bit of a gathering place for grunkies to breed.
The grip is comfortable and the knives to the job they are paid to do. The company certainly has a good reputation and these are certainly not bad knives per se....its just that had I purchased them I could not have purchased the entire set.
Overall I have to give this set four stars but please not that the removal of one star is more from personal preference than anything else. I think that most home cooks would delight in this set.
NOTE: They say these are "dishwasher-safe." No, no, no! NEVER EVER place your good cooking knives in the dishwasher nor should you was them in a sink with other utensils or dishes. This is a fast way to end up with dull blades. This is very, very bad and basically bad advice from the company here.

Fat Daddio's 18 Aluminum Gauge Half Sheet Pan Review

Purchased pans but description does not begin to describe them. They are made of extremely soft aluminum, bottom pan was bent and dented when they arrived. Not nearly as good as the Amco Food Service Half Sheet Pans which I had previously purchased. We will use these as give aways with a sheet cake or cookies on them and I will purchase more Amoco half sheet pans for our use. Guess the old adage is correct, you get what you pay for!!

Sharp, but too small for any normal kitchen tasks. You can slice a tomato, that's about it. Too small to slice a sandwich! The square butt of the knife digs into your palm and is VERY uncomfortable and not ergonomic whatsoever. Looks neat, that's about it. NOT recommended for anyone in the culinary industry.

Global 4-Inch Paring Knife Review

Global 4-Inch Paring Knife
Average Reviews:

(More customer reviews)
While renovating my meager kitchen, I recently splurged, spending over $330 on two Shun Elite knives. They were hand made Japanese knives--sexy and sleek, beautiful to look at it--and very sharp with a gleaming edge. They caught your eye with a dazzling patterned blade.
A friend, inspired by my kitchen equipment renovation, went out and bought Global knives, preferring them for his high-tech shiny stainless kitchen. He asked me over for a cutlery show-down with my new Shun Elites. I was ready to rub his Globals into the dust with my Shun Elites!
After an entire afternoon of chopping and comparing, we both came to the same overwhelming conclusion--the Globals were sharper and easier to use. It's not that they are sharper per say, but if you examine them closely, the Global's edges are slightly concave, and are burred and rough, while the Shun Elites are polished to a gleaming and shiny finish, and taper to a much more straight point. My friend and I both felt that the Global's burred concave edges allowed the Globals to sorta gripe and slice/slid through everything from carrots to meat with more ease than the Shun's polished and acute edge. Because of this ease, we can also logically foresee the Global's staying sharper longer as well, despite the higher rockwell rating of the Shun's high tech SG-2 powder steel. However, who knows...?
We even tried shaving hair off of our arms, and the Globals won this test with ease. They are incredibly balanced and just seem to bounce in your hands.
This "Spear" 4" paring knife in particuar has a funky "ergonomic" handle that many have critizized, but I LOVE it! I fits my large manly man hands WONDERFULLY and makes this knife everything I have wanted in a small paring style knife. I can see where if you had smaller hands, this might not be the right choice for you--you might want to check out Global's Western style paring knife, which feels like the same ol' Henckels or Wusthoff to me--MUCH prefer the more comfortable and molded feel of this much more modern design...!
I loved my Shun Elites--they were sexy and beautiful. But the Globals were obviously designed by and for chefs--they are much easier and nicer to use, and as I said, they just effortlessly (read rip) through any food with no effort at all; I was very impressed--so much so that I returned my Shun Elites and exchanged them for a complete set of Globals, which are less than half the cost of the Elites--and I got twice as many knives (never have had a good bread or boning knife before!)
I highly recommend that if you are searching for truly sharp (as in Hello, Mr. Winter Squash!), easy to use kitchen cutlery, that feels like an extension of your hand and arm, that you check out Globals--the Shun Elites possibly as well. They are both wonderful knives, but I genuinely have to say I see why Globals are so popular with professional Chefs--they are awesome knives--maybe not as sexy and hand crafted as the Shun's, but they more than make up for that with an incredible ergonomic ease and free flowing sharpness that makes them a joy to use.
