Keilen Italian Villa 14-by-15-Inch Rectangular Bread Baking Stone with Jumbo Pizza Cutter Review

I used to have a pizza/bread stone, and I hated the darned thing. First, it really did have a terrible odor from the start. I didn't realize that wasn't 'normal'. Then over time, everything got stuck to it. And finally I just tossed it in the trash.
Hesitantly bought this one. Had read all the reviews on it, and particularly for the money, seemed to have the best overall reviews. Was skeptical, but had wanted to start trying to bake 'artisan' bread, and the recipe I was using was very specific about baking directly on a stone only, and using a pizza peel to get bread in and out of oven.
Took new stone from box - happy to note there was no odor at all when I stuck my nose on it - brushed off the little bits of styrophome from the packaging, and without doing anything else to it, set it directly into my oven and turned it on to 500*. Had the worst fear I'd hear a big "pop", indicating the stone had cracked in half. But it didn't. Cooked stone like that for an hour - not a hint of scent coming from my oven.
Used the Prime shipping, so knew stone would be here in 2 days - had gone ahead and made the bread dough I'd been dying to try. Was a little worried though - my recipe has you keep dough in fridge until you bake it - was concerned about putting cold dough on extremely hot stone. But - was no problem at all. Cold bread dough + hot baking stone = no problem! Pizza peel came in same shipment, and it slid my dough onto the hot stone much easier than if I'd have tried to do it with my hands (I'll rephrase - slid the dough onto hot stone so I wouldn't burn the crap out of my hands and probably my arms too!).
Bread came out exactly as cookbook writer said it would - dark and crusty. When it was cool enough to cut, the inside was still moist and chewy, as recipe indicated. Excellent 'artisan' consistency!
The next day, I opened the oven and looked at the stone. Besides having a little cornmeal on it, it otherwise looked exactly as it did when I'd placed it in the oven - no stain or spot from the dough, still no smell.
Saw another review rebuking the pizza cutter. For me, I was buying a stone - the cutter, albiet not professional quality, was just a 'bonus' that came with the stone.
I'm happy - this stone is definitely a keeper!

Came on time, cost was cheap, brand is great for commercial/restaurant quality, works like its supposed to, durable...I also buy knives and other utensils by this brand. I am a career Chef by trade: Restaurant, catering, private, Personal...test kitchens.
I use a higher end brand for my chef/attache travel bag in the trade, but for restaurants, catering, and people who want good equipment but can't afford the JA Jenckels or Wustof 'brands' this is the way to go...comparable to the 'forschner victorinox fibrox' brand that is now getting more expensive from all the good reviews from cooks illustrated and others driving the price up.
This is one of the brands you would find at the commercial/restaurant supply stores.

Remanufactured Cuisinart CBK-200FR 2-Pound Convection Automatic Bread Maker Review

Remanufactured Cuisinart CBK-200FR 2-Pound Convection Automatic Bread Maker
Average Reviews:

(More customer reviews)
I'm by no means an expert at baking bread, although for a number of years I owned a Zojirushi bread machine with a vertical pan (their entry level model at the time). Unfortunately, that machine never produced consistent results for me, so when it broke I disposed of it and took a hiatus from bread baking. However, when I spotted this reconditioned Cuisinart priced at $59.99 on Amazon, plus a $10 discount for paying with a Buy It Now account and free shipping, I couldn't resist. My final cost was under $50, and for that price this is a deal you simply can't beat. New ones go for around $130, and as this unit was reconditioned by Cuisinart, only real difference is the length of the warranty (90 days vs. 3 years).
This bread machine is on the large size for a small kitchen appliance and is not convenient to move in and out of cabinets; you really have to leave this one on the counter at all time. Fortunately the Cuisinart features a beautiful stainless and black retro design, so it looks great in my transitional style kitchen. It fits neatly under my standard height cabinets, and is easy to move around on the countertop.
I have baked at least half a dozen loaves so far, and made a similar number of doughs for pizza and bagels. While every result hasn't been perfect, part of the reason is learning the idiosyncrasies of this machine and figuring out how to modify recipes to get the results I want. For me, who is inquisitive and experimental in the kitchen, it's not a drawback, but rather a challenge that I enjoy. And once I have both factors down for a particular bread, the Cuisinart produces beautiful well risen loafs. It just requires a learning curve to get the machine to make what you want.
There are something like 16 different programs and each one can be further modified for light, medium, or dark crust, and for 1, 1.5, and 2 pound loaves. There are warnings buzzers for adding mix-ins before the first rise, and for removing the kneading paddle before the final rise (which also allows you to shape the loaf and apply desired toppings). The only feature lacking is the ability to program and save custom cycles. However, the manual includes a detailed table that specifies exactly which cycles are included in each program, and how many minutes each cycle takes for the combination of program number, loaf size, and crust setting. The information is really valuable in figuring out what's going on, and for modifying recipes, especially since I have been trying out a number of different flours in my baking to achieve high fiber low carbohydrate breads that taste great. It also tells you at exactly what time the warning buzzers ring for each cycle, so you don't have stand around
Generally my experience has been that the crust setting works best at the light; even on medium I found it burned the bottom half of the loaf. There's a small window on top that lets you check on the progress of your bread; unfortunately there's no light so it can be difficult to see the inside. The bread pan shape is a taller than a standard loaf, but still shaped more horizontal than vertical; I personally like the shape of the finished loaf. There's only one kneading paddle, but I haven't had any problems with ingredients failing to mix in, although I monitored the process fairly closely at first until I was sure that I had the right ratio of water to flour. Also, it's best to remove the baking pan from the machine before adding the ingredients, and then snap it back in place when ready to bake; this minimizes the chance of spilling ingredients into some of the nooks and crannies of the machine, which can be hard to clean.
Overall, this machine was an incredible deal for $50; it's a slam dunk in that price range. Considering all of the functions, the beautiful design, and the good performance, I would say the Cuisinart bread machine is probably superior to any machine priced under $100. Even with a street price of $130 for a new unit, I think this Cuisinart is fairly priced and probably compares favorably to most competitors.

Sanyo 3-1/2-Cup Micro-Computerized Rice Cookers/Warmers with Bread-Baking Functions
Average Reviews:

When I saw it had a bread baking function, I was curious. I didn't expect a whole lot but I figured if the bread baking isn't great, I'd always have an oven anyway. So I took the chance.
I just used frozen bread dough (the one with 3 loaves in a bag). 1 loaf was a bit too big so I pinched off the end to make it smaller.
after 90 minutes I opened the lid it was all the way to the top. I then flip it over to brown the other side. Now the instruction says after 40 minutes you have to punch it down. Well, I didn't because I didn't hear the buzzer. But since it baked fine, I don't even bother to punch it down. It bakes fine without doing so. I used Pizza dough. What's great is that for a quick loaf, it won't heat up the whole kitchen. It doesn't use unnecessary eletricity(or gas) because you don't have to turn on the big oven. When we decide to have Italian, I just pop one piece of thawed dough. By the time the dinner is ready, bread is done. It doesn't produce dark crust, instead, it comes out with very light crust. Inside is so soft like steamed bun. It is so yummy. I also tried sweet roll dough with cinnamon, currant and sugar. It was great, too. I'm sure you can get really creative.
And by the way, it also cooks great rice, too. I used to own Zojirushi and I believe Sanyo cooks better rice than that. Not that Zojirushi is bad, it was an older model. This rice cooker's inner bowl is much thicker so that might be why....
Anyway, I am so glad I bought this.

Breadman BK1050S 2-Pound Professional Bread Maker with Collapsible Kneading Paddles and Automatic Fruit and Nut Dispenser Review

Breadman BK1050S 2-Pound Professional Bread Maker with Collapsible Kneading Paddles and Automatic Fruit and Nut Dispenser
Average Reviews:

(More customer reviews)
I have owned three bread makers in the past. All from different companies.
My first one made loaves that were tall and looked funny. But I really loved the bread, and the smell that came with it! I finally wore it out. I hated digging the paddle out of the bottom.
My second one was a tragic mistake by the company. It had an inherent flaw - bread stuck to the pan. Even after they replaced the pan for free - the second pan was even worse. I gave up making bread ... because even when I finally got the bread out of the pan, I still had to dig the paddle out of the bottom.
I really loved my Sunbeam 5891 2-Pound Programmable Breadmaker, so much so that I actually recently purchased one for my daughter. It does many things the earlier bread makers didn't, including quickbread and cakes. It makes gluten-free bread. It has fast settings and normal settings. And it even has a jam setting! It is shaped so that loaves come out looking like loaves. Only one thing I didn't like - I had to dig the paddle out of the bottom. (sigh)
And then - Breadman came out with this wonderful selection! A Bread Maker that does NOT leave the paddle sticking in the middle! Even more, it has all of the settings I used on my Sunbeam (although it is missing the cakes, which I didn't use) AND the automatic fruit and nut dispenser!!! So I set my Sunbeam aside, and "went for it." The bread maker of my dreams.
How does it work?
The feature works by creating a one-way paddle that collapses when it is reversed. So the paddle turns and kneads while it goes in one direction. At the end of the kneading cycles, the machine reverses the turning of the paddle and it collapses into the bottom of the pan.
As a result, while you have the impression of the paddle in the bottom of the loaf, the paddle is not stuck inside of the bread! So don't think it's perfect, it's just much better than before.
Cookbook and manual:
This comes with a wonderful manual that even gives a comparison chart so that you can use whatever yeast is available in your store. All of the recipes use standard yeast, so you need to adapt them if you want to use fast-rise or other variations.
The book is also very clear on how to use the various settings.
Even more, the cookbook included has a wide selection of recipes for every setting. I would recommend using the included cookbook before you go out and buy any other recipe book for your machine.
I did have a "tiny" problem with one of the recipes - for cinnamon raisin bread. It reversed two of the ingredient amounts - showing 1/2 cup yeast and 3/4 tsp raisins. :-( The mistake was easy to spot, by someone who knows a little bit about bread making.
Features:
One of my favorite features on this (besides not pulling the paddle out and having the automatic nut and fruit dispenser) is the fact that it will make quickbreads, and even has recipes for them. My next trip to the store will be for bananas and macadamia nuts - for banana macadamia nut bread. :-)
For me, this machine was worth it - just for the two extra features. However, since it is so close to the Sunbeam, except for these two features, and the Sunbeam cost is much lower, you will need to make your own choice.
Did I mention I really LOVE not having to dig the paddle out of the loaf?
EDITED - I have dropped this rating down to 4 stars - When I attempted to make cinnamon raisin nut bread, the nuts got caught below the paddle and scratched the surface of the pan. Amazon immediately sent me out a replacement using overnight mail, and gave me 30 days to return the defective machine at their expense.
If I encounter any future problems with the machine, I will pull the rest of the stars, but Amazon itself was very helpful in resolving the issue.

Choose from three loaf sizes (1, 1-1/2, or 2 pounds) and from three crust colors (light, medium, or dark). I had a stainless steel rolltop breadbox for years, and I hated it! It was impossible to keep clean, and if I was lucky, I could fit two small loaves of bread in it. Well, I finally had enough and searched for other options. I came across this item and although slightly sticker shocked at first, it was the best $50 I ever spent! The breadbox is huge, will easily fit two loaves of bread with plenty of room for hamburger or sandwich buns. With my husband gone for a few weeks I haven't been able to fully test the capacity, but I can tell you it's triple what I could fit in my old one! The construction is very durable as well. By far the best Bread knife I have ever used. Its weight and design lets it slice effortlessly through bread (and tomatoes if you are too lazy to get another knife out of the block). We bought this knife as part of a set, and out of the bunch it is my favorite knife.
If you are having trouble deciding between the Classic and the Grand Prix, I prefer the Classic.Although the Grand Prix is slightly more comfortable, I prefer the construction of the Classic. If you inspect the knives, you will see that the Wusthof Classic has a full metal tang with 3 rivets. The Grand Prix, although having the same blade, has a smaller, cylindrical tang that runs the entire handle of the knive. This tang is secured by a single large rivet at the end of the handle. Although I'm sure the Grand Prix is well built, I bought these knives for a lifetime of use and heartier construction of the Classics just appealed to me more.

Every element of this renowned cutlery contributes to its precision and ease of use. The high-carbon stainless steel blades are hardened to maintain a sharp edge and full tangs provide perfect balance with riveted, high-impact composition handles. The serrated edge makes this bread knife great for slicing through fresh crunchy loaves, such as baguettes, or cutting a piece of birthday cake without squishing the rest of your creation.Prized possessions of professional chefs, Wusthof knives are an invaluable asset of any kitchen. In Solingen, Germany, each piece is hand-forged in 38 manufacturing steps by skilled craftsmen. Lifetime warranty.Wusthof's newest state of the art technology incorporates a new computer controlled method for putting the edge on Classic knives. This technology allows for an exacting edge from the tip of the knife down to the heel of the knife. With this newer precision, the knives are made sharper to 14 degrees per side for a total of 28 degrees. The knives are now sharper and this refinement increases the sharpness retention because exacting angles and edges last longer than edges sharpened by hand. My Global has been slicing bread for three years now and guests still comment that it's "a really sharp knife". A low-carb disbeliever, and living near Seattle bakeries that are serious about their product, I eat lots of bread. Much mileage on the knife and it still melts through hard-crust Toscano Loaves like they were Wonderbread. Two more of these knives have been purchased for wedding gifts.
